Yes you can. If all the items are going altogether, then make one listing. It's then up to you and your collector if all of it goes as one lot.
Yes you can if you have time left on your package. Just go My Account/My Listings and change your item to Mark as Available instead of Gone.
That sounds like a great problem to have! It's up to you who you choose to come and collect your product. You can take the first person to message you or choose the person you prefer when you connect with them. It's totally up to you.
That is perfectly fine. You can organise to meet your collector outside your home or in a public place. If the item you are listing is large e.g. a piece of furniture, arrange to have the item on your verandah, in the garage or under cover outside. You can always ask a relative or friend to be there with you when the collector is there.
